1 cup majewel date. If you cant get these or they are too expensive you can use normal dates, just soak them in hot water for 30 minutes to soften them.
1/2cup walnuts
1/2 cup almonds
1/3 cup cacao powder or cocoa powder
1/2 cup desiccated coconut
Sprinkle of sea salt

Method

Rough chop the dates
Rough chop the nuts or put them in a bag and give them a good smack with a rolling pin (this makes blending easier)
Put all the nuts in the blender and blend until they go to a sticky ish paste
Then add the dates, cacao powder, 1/4 cup of coconut and salt.
Blend until it goes into a dough like texture, or until you can make balls. This takes 1-2 minutes depending on your blender. Mine always has a few lumps of nuts
Make 10-14 balls (depending on size). roll each ball in the left over coconut.
Put in the fridge for 60 minutes before eating.
Top tip – put 2 balls with some vegan yoghurt (I use coconut with a dash of vanilla extract) and it is like eating healthy brownie ice cream.
